OK, that may be a bit too far. On the surface some of our HS truffles
may sound ridiculous, but there is a method to our madness. While
sounding a bit off-the-wall, all of our exotic flavors match up
very well to the chocolates we choose to pair them with. Trust us,
we know what we’re doing. For example, you would not believe
how well a touch of heat or a dash of good sea salt actually brings
out the wonderful flavors in really good chocolate.
We also do extensive research (yeah, there are some perks to being
in the chocolate biz) to find the perfect chocolate for each flavor
profile. Green tea, for example, has a soft, subtle flavor that
would be easily overpowered by a higher cocoa content chocolate,
so you know what we do, we don’t use a high cocoa content
chocolate. It’s crazy, we know.

Curry and Coconut Truffles – We use a mixture of cream and coconut milk, infused
with our own curry spices and lemongrass to make the ganache for our
curry truffles. When you try one of these imaginatively concocted truffles,
you’ll think you’ve died and gone to Madras.

Loose Leaf Green Tea Truffles – We steep jasmine green tea in cream to produce our green tea
ganache, which is then hand shelled in dark chocolate. The subtleness
of the green tea and the jasmine make this truffle an otherworldly experience. |
